Cedar Planked Salmon
If you're looking for a way to amplify your salmon grilling then try this recipe where you grill on a soaked cedar plank. The smokey cedar flavors really impart a lovely quality to the salmon!
Ingredients
2 Small Scales Seafood Sockeye Salmon fillets, skin on
1/2 C. Olive oil
Salt to taste
Pepper to taste
Lemon juice and zest of one large lemon
1/4 C. Minced fresh dill or parsley
Water for soaking the planks *Soak the planks in wine for added flavor!
Equipment
A grill
Several cedar planks (we've even used hand split roofing shingles before in a pinch!!)
PREPARATION INSTRUCTIONS
1. First soak your cedar planks for a couple hours in water. *Or soak in wine for added richness! Fire up your grill to medium, or 350 degrees.
2. Mix olive oil, lemon juice, salt, pepper and minced dill or parsley in a small bowl.
3. Place your planks on the grill and leave a little space between each one.
4. Place your salmon fillets skin side down on the planks and coat each fillet with your marinade. Close the grill.
5. Cook your salmon for 10 - 15 minutes. Make sure to start checking at about 10 minutes to make sure you don't overcook any smaller, thinner fillets. Fillets are done when the meat is opaque, white fat is appearing and flesh forks easily. We like to remove fish from cooking just before it's done knowing that it will finish off in the minute or two after it's pulled.
6. Place the fillets on a serving platter. Often the skin sticks to the boards and is easy to remove.

*You can reuse your planks until they become too charred. Just wash them up and store them.
